Five Easy Pieces: Local Chefs Share Master Recipes That Form Base for Great Dishes

Mar. 29--What you put into it is what you get out of it, whether that means choosing fresh ingredients or mastering a cooking technique. What that doesn't mean, however, is that you have to spend hours in the kitchen. The best cooks know how to get the most out of everything they make. Keeping an eye on a simmering stock for a couple of hours can result in a great broth for countless dishes. The same goes for mastering the technique of roasting. Once you've got it, you can use it with chicken, vegetables, fish and even fruit. And don't forget dessert. Even a recipe as simple as sugar cookies can be used in many different ways. Spread out all the dough to make a chewy cookie cake, drop bits of dough into a cheesecake batter or bake extra large cookies to use for ice cream sandwiches.
