Bobby Flay ‘Throwdown’ Winner Offers BBQ Tips and New Cookbook
PHILADELPHIA, July 15 /PRNewswire/ — Butch Lupinetti, award-winning BBQ pit master and author of the new book, Butch’s Smack Your Lips BBQ Cookbook, has gone up against (and beaten) some of the world’s best cooks, including the Food Network’s Bobby Flay on “Bobby Flay’s Throwdown.”

Here are some of Butch’s tips for BBQ cooking success:
“The secret to great BBQ is making sure you get your coals started first and let them burn until they glow,” says Lupinetti. Don’t use lighter fluid to start your fire, unless you like the taste of fuel on your food. He also recommends keeping the grate off the coals (raised up) so you do not burn your food.
“Always keep a small section of the grill without coals; in case one thing cooks faster than others, you can move it there so it won’t burn,” adds Lupinetti. “And add the sauce at the end of your cooking — not the beginning.”
According to Butch, an ideal BBQ needs an ideal location. He recommends a comfortable place, preferably in the shade. He also recommends cooking on a non-flammable surface like grass or macadam. “The outdoor flavor and the beautiful setting where you are barbecuing can’t compare to cooking in a kitchen!”
“The best thing about cooking BBQ is the carmelization, because the juices drip into the coals and then flavor the coals as they cook the meat,” notes Lupinetti.
