Massage School San Diego Releases Raw Food Holiday Ideas
Following Santa Monica-based restaurant M.A.K.E.´s latest raw food cooking courses and in preparation for the holidays, Massage School San Diego has released a list of holiday meal ideas for the raw foodist.

M.A.K.E, a restaurant based in Santa Monica, Calif., recently wrapped up its intensive two-part raw food cooking course. In response to this new course, and in preparation for the upcoming holidays, Massage School San Diego has released a list of holiday meal ideas for those on a raw foods diet. According to Zagat, raw food chef Matthew Kenney´s M.A.K.E. restaurant recently hosted a two-day course on cooking and presentation for a raw foods diet called Essentials of Raw Cuisine. The course was open to raw food newbies, as well as more seasoned raw foodists. The course was inspired by local, seasonal products and incorporated state-of-the-art tools like dehydrators and thermal immersion circulators in order to create unique food items. Each session was 12 hours, spanning the course of two days. Cost for the course was $575 per person. More classes will be offered in the near future.

- Mashed raw cauliflowers, instead of mashed potatoes
- Mushroom gravy, instead of turkey gravy
- Sweet potato and date pie, instead of pumpkin pie
- Nut and raisin stuffing, instead of one made with cooked bread
- Mock turkey, using a combination of celery, green onion, parsley to taste, almonds, pecans, avocado, and sage.
Located in Santa Monica Place, M.A.K.E is a raw foods restaurant serving the Santa Monica, Calif., area. Opened earlier this year, M.A.K.E. offers an entirely plant-based menu. Started by chef and cookbook author Matthew Kenney, the restaurant is attached to the Matthew Kenney Culinary School.
A raw foods diet is the practice of eating only uncooked and unprocessed (raw) foods. Most raw foodists eat only fruits, vegetables, nuts, seeds, fish, meat and non-pasteurized dairy products. To be considered “raw,” a food must not be cooked above 115 degrees Fahrenheit. Some raw foodists also follow a vegan diet, avoiding fish, meat and dairy, while consuming only plant-based foods.
