On September 18, 2012 Dr. Campbell, professor emeritus of nutritional sciences at Cornell University and co-author of "The China Study” states for the Wall Street Journal that the most convincing proof on whether eating meat and dairy is good for people actually comes from the effects of not eating them. A growing number of people resolve their arthritic, migraine and cardiac pain when they eliminate dairy foods from their diet. For a dramatic improvement, Dr. Campbell recommends a diet which eliminates or has a very low intake of salt, sugar, and fat. “This dietary lifestyle can prevent and even reverse 70% to 80% of existing, symptomatic disease, with an equivalent savings in health-care costs for those who comply.”

Considering the health benefits and popularization of vegan and vegetarian diets one could expect to see a large variety of restaurants serving this specific demographic in all major cities. In a city like Vancouver, where the downtown core is home to an abundance of active people with the sea wall nearby, a plethora of Yoga studios and numerous fitness centers, it’s expected that the demand for vegan and vegetarian options is constantly increasing. However, Vancouver failed to meet the growing demand for a vegan and vegetarian restaurant that serves a great experience as well as great food – that is until late 2009.
