Chattanooga: Humane Society Deserves Praise

Jun. 11–CARRABBA’S ITALIAN Grill recently sponsored a fundraiser to benefit the Humane Educational Society. It was, as expected, a resounding success. The five-course meal raised more than $11,000 to help the shelter go cageless, a dream that became reality this past Saturday.
At the Cageless Party, catered by Moe’s Southwest Grill, supporters gathered to tear down the chain-link kennels and assemble the glass blocks that will separate the animals. With these changes, all the dogs and cats can live in dens with natural lighting, soothing music and the sounds of nature.
Director Guy Bilyeu took me on a tour of the facility awhile back, and I was totally impressed with all the changes that have been made. It had been 20 years since I had visited the Humane Society and, as you will see next time you go in, it’s not the same place. The transformation to date is amazing and a source of pride for the city.

I PUT OUT A request not too long ago for a restaurant that serves beef ribs, and now another reader has the same question. Seems that Dan Chaij of Chattanooga is having a problem finding an eatery that serves them locally. “Many locations of Tony Roma’s serve finger-licking beef ribs, but all we can get here is pulled beef,” he said. TASTE OF HOME HAS a new magazine-style cookbook, “Taste of Home Comfort Food Diet Cookbook” that sheds new light on healthful cooking. As I was turning the pages, words such as flavor and texture came to mind — two words seldom associated with diet food.
Color pictures accompany each recipe, along with nutrition analysis of every dish, such as Slow-Cooked Pork and Beans, a dish with plenty of comfort and ease in preparation, along with just 217 calories per serving. It’s a one-dish meal that simmers in the slow cooker all day.
Slow-Cooked Pork and Beans
1 boneless whole pork loin roast (3 pounds)
1 medium onion, sliced
3 (15-ounce) cans pork and beans
1 1/2 cups barbecue sauce
1/4 cup packed brown sugar
1 teaspoon garlic powder
Cut roast in half; place in a 5-quart slow cooker. Top with onion. Combine remaining ingredients and pour over meat. Cover and cook on low for 6 hours or until meat is tender. To serve, remove roast, shred with two forks. Return meat to slow cooker and heat through.
Makes 12 (1-cup) servings, each with 217 calories, 6 grams fat, 56 milligrams cholesterol, 404 milligrams sodium, 16 grams carbohydrate, 2 grams fiber and 24 grams protein.
