Dippin’ Dots Goes Classic in Ice Cream
Aug. 19–PADUCAH, Ky. — Paducah-based Dippin’ Dots introduced a new line of ice cream Thursday called Dots ‘n Cream that combines beads of cryogenically frozen Dippin’ Dots inside a base of classic ice cream.
Five initial flavors — vanilla, chocolate, mint chocolate chip, butter pecan and banana split — are being made at the firm’s plant at 5101 Charter Oak Drive. The company is researching several more flavors.
Starting in September, Dots ‘n Cream will be sold in nearly 400 Kroger stores in five states, including the cities of Louisville and Lexington; Nashville, Tenn.; and Dayton and Cincinnati in Ohio. President Curt Jones said he hopes other grocery chains will follow.
The ice cream is the first by Dippin’ Dots that may be stored in a conventional freezer. Dippin’ Dots beads must be served at -20 F.
Jones, a microbiologist who founded the company, said the ice cream reflects the company’s technology.
“We freeze Dippin’ Dots instantly through cryogenics. We’ve known for 17 years now that quick-freezing results in fresher, creamier ice cream,” he said. “By incorporating Dippin’ Dots into a conventional ice cream base, we’re adding flavor and freezing the classic ice cream from the inside out.”
He said other firms are trying to produce light ice cream with a similar process. While Dots ‘n Cream isn’t light ice cream, the cryogenic process produces richness without having to use extra butterfat, Jones said.
