Dorm Dining Hall to Offer Organic Salads: UNIVERSITIES TRYING TO SPICE UP MENUS

Apr. 3--This week, a residential dining hall at the University of California-Berkeley will start offering a certified organic salad bar, part of the school's new effort to boost the quality of its food.
While the Crossroads Dining Hall offers vegan, kosher and low-fat menu items, its food has tended toward mainstream. If the new salad bar is successful, campus officials hope to open similar salad bars in its three other residential dining halls.
The new organic salad bar -- which will offer two dozen raw ingredients, eight dressings and prepared items, including tabbouleh and pasta salad -- has been certified by Santa Cruz-based California Certified Organic Farmers to be labeled 100 percent organic.
The campus hopes to contain costs by eliminating pre-cut vegetables, which are expensive.
All over the country, universities are spicing up cafeteria menus, improving the quality and variety of food to please students seeking healthier and fancier fare. Many schools now offer sushi, brick-oven pizza and Asian and Mexican grills where students can choose their own ingredients and sauce.
Schools are also increasingly buying "fair-trade coffee" for their campus espresso bars.
Menlo College in Atherton went organic several years ago. Its poultry, beef and pork are grain-fed and free of antibiotics, hormones and some preservatives. The produce is organic and locally grown where possible. It also offers organic cheeses, eggs, oils, spices, flour, granola, tofu, soy milk and other popular ingredients.
