La. Crawfish Back on the Boil After Rita

Crawfish in southern Louisiana appear to have recovered their numbers from the pounding the Gulf Coast took from Hurricane Rita.

The season is still early, the Baton Rouge (La.) Advocate reported.

They are not abundant yet, but they are available, said Greg Lutz, of the Louisiana State University Agricultural Center. It’s looking promising right now, it’s looking like we’re going to have a normal year.

Rita’s storm surge sent salt into areas where the crawfish breed and grow. But Lutz said that most of the salt has been washed back to sea.
