Evolution a Theory, Not a Scientifically Proven Law

As Karen DeMarini (Sept. 13 Forum) sarcastically pointed out, Rev. Keith Thibo failed to mention the scientific evidence that disproves evolution. First, it is the "theory of evolution," not the "law of evolution," because it has yet to be proven.
Evolution is based on natural selection, that the weaker members of a species that couldn't cope with environmental difficulties died. That left only life that could cope, which passed on its superior traits to the next generation.
This is a great theory; it's hard to argue that giraffes with shorter necks would have perished because they couldn't eat during tough times. However, it is rooted in a fundamental belief that life evolved up, that single-celled organisms became increasingly complex in their effort to survive and thrive.
However, there has never been a recorded incident of any mutation adding genetic material. All known mutations remove or disrupt existing genetic material, and usually not for the better. I'm talking about the real world, not a place where X-Men are super heroes. If single-celled organisms didn't mutate more genetic code, how did life's biological complexities come to exist?
Regarding Ms. DeMarini's comment that the scientific community would put the facts that disprove evolution on the front page of every newspaper, I remember science being slow to embrace ideas that challenge existing beliefs. If evolution was proven false, would various forms of research funding dry up? I can't back up this claim, but apparently that's not required for something to be considered truth anymore.
