Flavor Your Life, a campaign funded by the European Union that aims to spread olive oil industry news and information, details how olive oils can differ depending on the region the olives were grown in, the type of olives used and the time of harvest.
“Olive oil” is a general term that does not take into account the region that the olives were grown or the type of olives used in the production of the oil. The classification of olive oil is based on physical and chemical analysis, not on the organoleptic characteristics that make varieties of olive oil distinct.
When distinguishing varieties of olive oil, the types of olives used, the regions where they were grown and the date of harvest are important factors to consider. Carol Firenze, author of the passionate olive, shares some insight into producing olive oil. “Keep in mind that all EVOO is not pungent, bitter, dark green or intense; it depends upon the type of olive and mainly when it is harvested.”
An olive oil producer can also manage the taste of the olive oil they would like to produce based on the harvest and the maturation of the olives. For example, olives that are harvested before full maturation will typically produce oil that has a fruitier aroma. “A later harvest olive oil (when the olive is black) is milder and an early harvest olive oil (when the olive is green) is more intense in flavor and color,” says Firenze.
Olive oil is also classified by region. For example, Italian olive oil has distinct flavors based on the region the olives were grown in and the types of olives used to produce it. Frienze says that these differences make olive oil great for every palate. “Olive oil comes in mild, medium or robust intensities to suit every taste and food pairing.”
